Wild Earth was founded on the wild lands of Bannockburn and has developed a sensational little Rosé that reflects the rugged beauty it grows in.
Wild Earth’s Pinot Rosé delivers a Central Otago Pinot taste delight of red berries in cream, and flavours of spiced pear and nectarines. Wild Earth wines are never far from unique food innovation and for this wine it loves been served with a chicken or fruit salad, white fish, or a tempting cream brulee.
This delectable Pinot Rosé 2014 was created from dedicated grapes off Wild Earth’s Lowburn Vineyard. 48 hours is all it took to infuse the gorgeous colour to the juice, then the fermentation focused in on retaining the fruit characteristics and was stopped just short of completion keeping a touch of natural berry sugar.
The taste conjures up memories of desert of strawberries and raspberry in cream. Following on from the berry delight hints, flavours of spiced pear and nectarines shine though, balanced by some perfectly weighted acid. This Rosé, although it may be wild is extremely inviting expressing Central Otago Pinot Noir in a lighter form and one that marries brilliantly with Salmon or Asian dishes, a chicken salad, or if you have ordered a couple of bottles for desert –a chocolate crème brulee.
