Spy Valley’s Sauvignon Blanc is a regular winner on the show circuit pleasing the tastebuds of all who interrogate its flavours. The secret behind this internationally recognised Sauvignon Blanc comes from Spymaster Paul Bourgeois brilliant winemaking skills. Spy’s Sauvy is predominantly harvested from the original 320 acre Johnson Estate of which Viticulturist Adam McCone knows every vine inside out – a skill he picked up from the neighbouring spy satellites!
2015 was an outstanding year for fruit destined to Spy Valley’s Sauvignon Blanc. Like a true mystery all the parcels were kept secret from one another, each being crafted slightly differently. Only after blending were the final flavours revealed enlightening you on an intense fruit style that is full of lively passionfruit and tropical gooseberries accompanied by extra layers of herbs and the odd savoury texture from the small portion that was made in barrels. Racing through the fruit runs a thirst quenching lime citrus acidity and mouthwatering mineral characters that underline the overall plot of this passionate spy thriller.
