The Aviator takes you to the heavens just like AD’s Tigermoth did its heyday, and is crafted under Squadron Command, Lt Barry Riwai (winemaker) guiding experience of traditional Bordeaux winemaking. Aviator’s is created with selection of berries in the vineyard extended skin contact at ferment followed by small basket press into barrel. There the Aviator enjoys a lazy 17 months in 75% new French Oak before being bottled. The Aviator provides an acrobatic display of concentrated red fruits, spice, leather and cigarbox aromas in the airspace of the wineglass. Once in the palate initial flavours include rounded red berries, blackcurrants, and cassis. The power of the afterburners then kick in, with an intense full body concentrated, with black olives, chocolate, and savoury characters, finished with elegant cedar oak tannins. Not one to back down on a mission this wine is relentless in providing you with well structured concentrated flavours. If you really want the top gun experience however, ground this ‘Maverick’ flyboy for a few years and then let the real aviator take your breath away….
