Central Chardonnays are a bit of rarity, giving most of limelight and vineyard space to their colourful burgundy cousins. Fortunately for us Chardonnay has been an original variety since 1993. So with 17 years of making Chardy Carrick know a thing or two about making a decent Chardonnay, in a climate similar to the French region of Chablis. The French think Chardonnay is perfect for the cold climate of Chablis – Carrick tend to agree. In 2017 the organically grown vines were ready with their fruit to harvested in late April. Organic winemaking procedures followed these grapes into the winery where they were whole-bunch pressed and naturally fermented in French oak for 11 months. Once out of the oak Francis Hutt (winemaker) has crafted a Central Chardy that brings together all the elements of the region together with the delicious flavours of the grape. Aromas of mouth-watering citrus balanced with sweet creamy almonds start the experience. In the palate the flavours turn textural mixed in with lush stone fruit, rich rock minerals, and grapefruit crispness.
